The beginnings of Roasted Corn Quesadillas.
Ice cold lemonade...a perfect summer drink.
The final presentation. The quesadillas were sensational. The roasted corn was so sweet, which balanced the tartness of the tomotoes and the heat from the peppers. The cilantro in the accompanying sauce was perfect. If you get a chance to try these, you really should.
